This brings us to mistake #3. In not buying a whole turkey you are losing the opportunity for pan drippings, the heart, liver and neck to use in flavoring your gravy. You make the gravy while the bird is resting. I'll do that when I get a Caja China. You can cook up to 6 turkeys at once with that method. The charcoal is ABOVE the meat with a drip pan below.

I recommend that everybody try the young turkey breast and see for themselves how great it is. Publix and Perdue have about the same stuff.

Since they are pre cooked, it seems you only need to re-heat them. typically, when you cook a turkey, you cook it to around 165 degrees or so.

I get a ping to answer PJ's cooking question and it's already answered. Boo hoo! Yes, the birds will cook for the same time. I will often make two roast sticky chickens (I know. Not a turkey, but their both poultry) at the same time. They take no longer.

Okay. I made a mistake. They are NOT pre-cooked. I meant specially prepared.Just as bad. Unless they are brined, you are paing extra for a USELESS procedure. You should still cook by temperature and NOT by time. Extra meat in the oven doesn't change anything except to drop the temperature greater when you first put the meat in. Try pre-heating the oven to 25 degrees above the temperature you wish to cook at and then turn the oven down when you put the meat in. I keep my pizza stone in the oven at all times to act as a heat sink and reduce temperature fluctuations from opening the door.
We'll talk about steaks later. I can give you a fool proof method to get a perfect steak and you don't even have to fire up the grill. You do need a vent fan in the kitchen.

How fitting that your entertaining article (one of your better ones IMHO) about that turkey Rangel and his cannibal turkey fellow dims,who now want him for dinner, should conclude with a request for advice on turkey baking.

All I know is that the properly prepared and cooked Publix young turkey breasts are BY FAR the best turkey meat I have ever eaten. The others don't even come close. So even if the experts claim they are not the best, to me they are the best.

Use a thermometer and I think you pull them at 161 degrees and let them continue to cook on the counter for 15 more minutes. Anyone with the exact temp?
