I'm sure most of you have you calendars marked but in just in case, I wanted to remind you that today is Texas Independence Day.
Today in 1836 the plucky band of pioneers then known as "Texicans" declared their independence from the tyrannical rule of Mexico and the despot Santa Anna. This cheeky declaration in the face of Santa Anna and against the massive well equipped Army of Mexico precipitated the titanic struggle that included the battle of Goliad, the battle of the Alamo, and ended with the defeat of Santa Anna at the battle of San Jacinto.
These patriots met at Washington-on-the-Brazos and set into motion a far reaching series of events that eventually culminated in the independence of Texas -- the face of the North American continent would be remade in a fashion that even the most clairvoyant could not have predicted.
The gist of all of this is that even if you're on a diet, it's OK to "pig out" today on enchiladas, refried beans (frijoles), chili con queso, fajitas, and soapapillas.
