Roasted Free-Range Turkey with Pear Chestnut Stuffing
Serves 8 to 10 The stuffing may also be baked separately in a buttered casserole at 375° until heated throughout, thirty to forty-five minutes.
12 tablespoons (1 1/2 sticks) unsalted butter
6 stalks celery, strings removed, cut into 1/4-inch dice
2 large onions, cut into 1/4-inch dice
1/4 cup fresh thyme leaves, finely chopped
1 teaspoon finely chopped fresh sage leaves
1 tablespoon coarsely chopped fresh flat-leaf parsley
1/2 pound roasted chestnuts, shelled and chopped
27 slices stale white bread (1 1/2 pounds), crusts removed and cut into 1/4-inch dice (about 8 cups), lightly toasted
1 1/4 cups Homemade Turkey Stock, or low-sodium canned chicken broth, skimmed of fat
4 unripe Anjou pears, cored, peeled, and cut into 1/2-inch dice
1 tablespoon salt
1 twelve- to fourteen-pound free-range turkey
1. Heat oven to 375°. Make stuffing: In a large skillet, melt 4 tablespoons butter over medium heat. Add celery and onions; cook, stirring, until translucent, about 10 minutes. Stir in 2 tablespoons thyme, and sage, parsley, chestnuts, and bread. Add stock, 1/2 cup at a time, until bread becomes moist. Stir in pears; remove from heat.
2. Place remaining 1 stick butter, remaining 2 tablespoons thyme, and 1 teaspoon salt in food processor. Pulse until well combined; set aside.
3. Wash turkey, and pat dry. Place, breast side up, on a roasting rack set in a large roasting pan. Season turkey cavity with remaining 2 teaspoons salt. Fill cavity loosely with stuffing. Tie legs together with kitchen string. Fold neck flap over; secure with skewers. Rub thyme-butter mixture all over turkey.
4. Roast for 2 1/2 hours, basting often. Continue baking 30 to 45 minutes more, until an instant-read thermometer inserted into the thickest part of the thigh reads 180°. If turkey becomes too brown, tent it with aluminum foil. Let cool for 20 to 30 minutes before removing the stuffing and carving.

Ewww. That reminds me of an aquaintance whose childhood pet goose showed up as the centerpiece at the family Christmas dinner. This guy had serious problems. Bert and Ernie, on the other hand, seem to be handling it quite well.

..I was disengaged, frivolous, four sheets to the wind on a weekend.The dims certainly thought being one sheet to the wind was a hanging offense when they dragged out W's ancient DUI. Guess this means ol' four-sheeter is ineligilble for office.

The word "simplicity" was the perfect title for a small poem that was banging around in my head so I appropriated it. Hope you don't mind.

You're more than welcome here anytime. I just wanted to save you some time,,,,, thinking you were coming here in search of romance. *hysterical cackle*
On another matter. The poetry was nice. Simpicity is my specialty,, from stripped down cars to no nail polish. The only two artificial things about me are my control top panty hose and the Clariol thing, which adds body to my fine hair.

Eggs
boil and cut lengthwise the eggs, placing cooked yolks on a separate dish.
crumble yolks with fork, add salt, pickle relish, Miracle Whip, beat with mixer until smooth. (May add some yellow food coloring at this point if desired)
Using a tablespoon, insert yolk mixture back into halved eggs.
I'm not much on measuring. But this gives you the general idea of a plain and simple method.

Y'all have probably had this one at one time or another, but it is a definite winner for your leftover turkey.
King Ranch Chicken Casserole
1 (3 pound) chicken, boiled and deboned (or leftover chicken or turkey)
1 package corn tortillas cut into strips.
1 (10 ounce) can diced tomatoes with green chile peppers
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 onion, chopped
3 cups shredded Cheddar cheese
Preheat oven to 300 degrees F (150 degrees C.)
Layer half the tortilla strips in a 9x13 inch casserole dish.
Combine the tomatoes, chicken soup, mushroom soup and
onion. Pour half of mixture over tortillas.Add half of chicken. Layer the rest of the tortillas, the rest of the chicken, half of the cheese and the remaining soup mixture.
Bake for 20 minutes.
Top with the remaining cheese and return to the oven
until the cheese is melted.
You can use tortilla chips instead of regular tortillas if you want.

Received an e-mail that added green olives w/pimento that also
sounded good.

I use some of the whites in my yolk mixture. E.g, I boil 10 eggs. Use all 10 yolks plus I chop up two of the whites.
For the stuffing I add vinegar and a little mustard to the ingredients IG listed above. This works for both sweet pickle as well as olive stuffing...but I find most people like the pickle better.

Triple Chocolate Crockpot Cake
1 pkg Chocolate Cake Mix
1 8 oz carton cour cream
1 pkg instant chocolate pudding mix
1 cup chocolate chip morsels (I dump in the entire bag)
3/4 C. corn oil
4 eggs
1 C. water
Spray "classic" size crockpot with cooking spray or lightly grease. Mix cake mix, sour cream, pudding mix, chocolate chips, oil, eggs & water in a bowl BY HAND. Pour into crockpot, cover and cook on low 6-8 hrs or on high 3-4 hrs. Serve warm or hot with ice cream or whipped topping (or both)
