Totally off the subject, but I'm wondering if any of you have a favorite casserole or two. We are having a "Casserole" shower for a friend that is due with her second boy next month, and all she wanted was food so she wouldn't have to cook. Any thoughts would be greatly appreciated. I thought about making my famous bread pudding, but I wanted a main dish as well.

Mama Lo's Broccoli Casserole

5 slices of day-old bread, torn into bite-sized pieces
1 bunch broccoli (or half of a 16-oz frozen bag, thawed)
3 eggs
1/4 cup milk
4 Tbsp butter, melted
1 cup grated cheddar cheese
1 tsp. salt
3 Tbsp sugar

Preheat oven to 350. Butter an 8-inch square Pyrex baking dish. Cover bottem of dish generously with torn bread. Cut broccoli head and tops of stems into bite-size pieces and lay broccoli on top of bread.
Mix together all remaining ingredients. Pour over broccoli and bread. Cover with aluminum foil. Bake 35 minutes. Serves 6.

I got this recipe from a book by Jane and Michael Stern. They travel around the country and write about the good food they find along the way.

Hi there - tomorrow I'll give you a sausage, egg, and other goodies casserole that I will eat morning, noon, and night.

A receipe from my AF mil usually served Christmas morning, but that is so good we now serve it at the drop of a hat.

SAUSAGE, EGG, HASH BROWN CASSEROLE




1 lb. sausage9 lg. eggs, slightly beaten3/4 c. milk1/4 c. melted butter24 oz. pkg. hash browns8 oz. shredded cheddar cheese

Preheat oven to 350 degrees. Layer cooked and drained sausage on bottom of well greased 9"x13" pan. Add milk and butter to beaten eggs and pour over sausage. Add hash browns and top with shredded cheese. Bake 1 hour

There are any number of variations to this receipe - you may substitute croutons or crumbled bread for the spuds and moving them to the lowest level of the casserole before cooking.

This receipe cannot be screwed up. ;-)
