I've always thought of lembas having more of an almond flavoring.

Well, if you break the word up it's lem-ba, so the indications for lemon are evident. And if Tokien wasn't concerned with that kind of stuff (the meanings of words), no one was.
However, I like almonds pretty well, also. In fact I don't resist nuts well at all. Though maybe it's the salt on them that gets me.
