H-1B (and H-1B1, E-3) LCA Labor Condition Application filings, which are far higher than the number of H-1Bs actually granted. The LCA is the first step for a company to take in applying for an H-1B. Higher education institutions or non-profit research organizations, including governmental research organizations, are not subject to the H1B annual cap of 85,000. Here is a site where the employer names and counts of exempt H-1B employees can be queried by year and state:

As for numbers of OPT and CPT visas (handled by DHS - ICE), the only data available are that of the top 200 employers. Of course, Federal agencies cannot provide the names of the individual visa holders. It will take FOIA/Freedom Of Information Act inquires to get complete lists of OPT and CPT employers.
