Pollard. I can't speak to the Baker Creek sourdough, but we are using one from Amazon and it produces a very mild sourdough and good results. (From Connecticut, a state that would be two counties in Kansas or Nebraska!)

I did look at the Baker Creek catalogue and if you get the one from Baker Creek let me know how it works.
