Nobody seems to have begun a Thanksgiving food/cooking thread, so I thought I would.
I've never eaten okra, but have always wanted to try. This time of year, I can probably only get frozen here; does anyone have a recipe they like for frozen okra?
Thanks. I love beans.
My granddmother loved beans, too; and often made herself bean sandwiches.
I buy some beans from Rancho Gordo, and recently bought one I hadn’t heard of before:

It’s supposed to be very good, and when I cook them I’ll let you know how they are.
What are ‘boiled onions’?
Not your typical sour sauerkraut. I made this for a group that came for lunch & we were serving brats. Two people who said they didn’t like kraut tried it when I told them it was different - they both very much liked it.
Bavarian Sauerkraut

That sounds much better to me. Is the sauerkraut the refrigerated kind?
Thank you! I love Bavarian style sauerkraut! I’ve not had a good recipe, so I will try this one. It looks really yummy!
Interesting. Never heard of that kind.
.
We like pea and peanut salad.
Frozen peas, thawed
Spanish peanuts with skins
Chopped onion
Caesar dressing
Boiled onions are an old New England staple for Thanksgiving and exactly what it it sounds like. Take some yellow onions, boil them till they’re soft, drain and put a big chunk of butter in, let it melt, stir and serve. They’re actually very good.
Yes, it is the kind that’s in a bag & refrigerated. You should try the recipe - I think you’ll be surprised (I was!). Read the comments & that will be encouraging, too. The only change I made was to leave out the caraway - I just don’t like it.
I certainly thought it was yummy :-) I did leave out the caraway because I just don’t like that flavor.
Use black-eyed peas for the beans in chili
I was thinking of panko breadcrumbs.
Agreed! I think I love Christmas, but I think I love Thanksgiving even more. Not too commercialized. No pressure to buy presents. Just prepare a dish and gather the family and friends for a nice dinner.
We stopped with the turkey and have been cooking chickens on our rotisseries these past couple of years. A lot of the other traditional dishes have gone by the wayside. No more cranberry sauce out of a can. No more green bean casserole. No more of that corn casserole thing. Not even stuffing or mashed potatoes this year.
Instead the sides are:
Glazed and roasted carrots and shallots.
Creamed pearl onions.
Mashed sweet potatoes. Or wild rice with mushrooms and fennel. Haven't decided yet.
Probably a crusty sour dough bread.
Dessert: Apple and cranberry crisp.
What matters is that most of the family will be there.
Worth a try!
Really liking this thread in a vicarious sort of way. I’ll have to try black eyed peas someday.
I made some deep fried perch in panko recently. Love perch, ate tons of it growing up but none in recent years. Dad always deep fried whole in a butter flour coating. Panko really kicks it up. I wish I could find a source of bulk frozen cod loins that was not more than 10 pounds worth that would not break my budget.
Have you ever made Texas/Cowboy caviar? Many recipes include black eyed peas. https://www.acouplecooks.com/texas-caviar-cowboy-caviar/
I do keep canned black eyed peas on hand for an “emergency” when I can’t find fresh ones, or don’t feel like soaking the dry ones. There’s a brand called “Glory” that has a seasoned southern style canned black eyed peas that tastes ok in the “caviar” recipe. Also, I use shishitos in it instead of jalapeños.
When I make ham with black eyed peas, rice, and collard greens for New Year’s, there are usually fresh peas available in the produce section around here. I have seen them frozen sometimes too, which reminds me, I’d probably prefer that as a backup than canned ones.
Hold the Okra! It’s a LOVELY plant - looks much like a Hibiscus when in bloom, so I grow it for it’s decorative qualities. But to EAT it? This Yankee says, NOPE! ;)
Skip the Okra and double up on the stuffing because this day only comes ONCE a year! My BFF’s daughter makes this and it is fan-tastic:
