I've looked at 5 recipes and all differ so this what I came up with. Three recipes had mace while any other spice was only in two recipes max so I figure mace is a must. Some spices were only in a single recipe. Will take 3-4 foot of casing which means 6-8 sausages which seems like not much for the $20 of meat.

Beau is considering pigs and I have been campaigning for the Kune Kune.
But for now, I just need to get through the next two weeks caring for Stew the Steer. He’s 800 pounds, now. Hoping the fencing in his pen holds; he gets VERY excited when he sees the grain bucket heading his way.

42 lbs of poly film - 32x40 came in. Track and wiggle wire should be here Saturday but it’s USPS so ....
Next week’s days off will be around 60 for highs. If not too windy, I’ll get the top end poly put on both ends with 8’ step ladder strapped down to the roof of the Trailblazer. After that, it’s ground work or a few steps up a step ladder on the ground.
Exception will be gable vents/fans but that won’t be until next year. I’ll have to take measurements to see if those can be done from a 10’ step ladder sitting on the ground. If so, I’ll buy one. In the case of the NW end, it could be done from the roof of the tunnel shed, even if I have to build a step/platform on the roof from wood. If I have to strap a ladder on the roof again for the SE end, so be it.
Got the little items done on the rig. New high beam bulbs, taillight and liftgate cylinders put in. Liftgate cylinders are a big improvement. Open it a little and it goes up the rest of the way on it’s own. That will be nice for those times when I can hold $100 worth of groceries in one hand :(
Will see how much of an improvement the high beams are in the morning. Just in time for actual cold temps this week in the low 20s one morning which will make the deer all energetic and be out and about. The little valley I go through on my way out gets extra cold so it’s a popular hang out spot for them — 55 mph paved road. No street lights or even yard lights. Just dark. I’ve seen a dozen in a half mile strip of road.
