FAST FLAVORFUL FAJITAS
Ing 1/4 c Italian dressing 3 tsp lime juice 1/2 lb thin-sliced cooked beef strips 1/2 c ea chp
cooked broccoli, chopped tomato 6-6" pitas, halved or warmed flour tortillas Chp Lettuce
Make--combine dressing, lime juice. Add thin strips beef, broccoli, tomato. Toss to coat. Cover;
fridge 1 hour. To serve: Line pita or wrap w/ lettuce; fill with 1/2 cup beef mixture. Serves 6.

PIZZA THINS / good do-ahead snack for the "big game"
Ing-- 2 lbs grnd beef 1 tsp olive oil 1 lge chp onion, 3 minced gar/cl 1 tbl ketchup 1 tsp A-1 Steak Sauce 1/2 lb shredded Cheddar Dash gar/powder halved Pita rounds 1 can Pizza sauce grated Parm s/p pinch oregano and basil
Brown beef, ol/oil, onion, garlic. Drain excess liquid and discard. S/p to taste. Add Cheddar to ground beef, w/ ketchup, A-1 Sauce and garlic; let melt. Spread on Pita rounds. Spoon pizza sauce over top; sprinkle w/ oregano, basil and Parm. Bake 450 deg 10 min golden and bubbly.
Notes: Can do in advance, freeze on sheetpan, then bake as needed. Variation: Add minced pepperoni, shredded mozzarella. Top w/ olives, tomato cubes, pepper strips, etc.
I have lower back problems, too. (Thanks, Army!) I’ve found that knowing what I can and can no longer do helps me a lot. ;)
The neighbor with the horse farm? Some years if hay is high, she spends $60,000 on hay to get her huge number of horses through the winter. Granted, she has hundreds of horses and ponies - but YIKES!
Ithaca can go through most of one large square bale in the winter months, as can the current steer in residence.

Pitas are great! My favorite sandwich is a pita stuffed with sprouts, sliced green peppers, sliced mushrooms and Swiss cheese - all melted together a bit. Yum!
Yes, I ‘know’ her & have had some interesting conversations with Ridesthemiles :-) I rode dressage & hunter/jumper & she did competition endurance rides. One of my horses I sold ended up being an endurance ride horse & did pretty well from what I heard.
$60,000??? Good grief! I usually spent a couple hundred dollars on hay for the winter - a bale a day (standard rectangular) would usually be enough so 130-150 bales would get me through the winter & into Spring grass season. I supplemented with grain as well, but not too much ... the horses would come running when I would “whistle them in” ... they knew they would be getting a grain treat.
The back is surprisingly better today after a somewhat rough day yesterday ... I can now stand/sit down without the knife stab pain. I can still feel it if I twist at the waist, so I won’t be doing any of that today!

Hmmm... Could you figure out a way to do a controlled “slide”? I assume the angle to the bin is too shallow to run some 4” PVC pipe with a large funnel at the top.

Drainage type PVC pipe, BTW. Schedule 40 would be overkill and more expensive.

Surprised me, but glad they won. It IS a fun series ... my 92 yo mom is even watching & calling balls & strikes LOL
I may do a slide down the basement steps - I think I can work something out. Once down the steps, I can use a hand cart to transfer the bag(s) to the bin. I can pick the bag up high enough to dump it in the bin.

Tortellini in Alfredo Sauce
The easiest and best Alfredo sauce. can be added to different dishes. Nice for a company dinner.
In saucepan, almost melt 1 stick butter, then add 8 oz cream cheese cut in 4 pieces; mix well, then add cup halfnhalf, 1/3 c Parm, tbl gar/powder, shake of pepper. Stir well. When "sauce-like," set aside to thicken. Stir frequently. Pour over cooked tortellini, and serve w/ chp parsley garnish.
My ex was a Chef and that was the first dish he made for me when we were dating, along with steamed Patty Pan squash that he grew in his Kitchen Garden.
He’s my ex for MANY reasons after 23 years, but NOT for his cooking skills. I will give him credit for that one thing.

Being a good cook is a good thing.
That’s it! Put one of those motorized stair/chair lift thingies on your stairs to the basement, and put the salt pellets bag on it! A lot less than a hospital bill with a thrown out back, and a lot less painful!
Mama told me that the way to a man’s heart is through his stomach, so that’s what I worked on first! ;)
