
Creamy Pumpkin Bisque w/ Bacon Bits / 4 servings
Creamy and comforting flavor with a swirl of cream.
Ingn 4 Slices chp Center Cut Bacon, 1 chp Onion, 2 minced gar/cl 3 C Pumpkin Puree
4 C Chicken Broth 1/2 C Half and Half 1/2 Tsp Nutmeg S/P Fresh Chives Garnish
Instructions Cook bacon crispy. Remove and set aside, leaving drippings in pot. Add onion/garlic to pot; cook til softened. Stir in pumpkin puree, broth. Simmer 15 min. Immersion blender to puree smooth, or carefully transfer to blender in batches. Stir in half and half, nutmeg, s/p. Serve topped with crispy bacon, fresh chives, a swirl of cream.
You can make a day or two ahead; store airtight in refrigerator. When ready to serve, reheat gently; add bacon garnish right before serving. Freezes well; cool completely, then transfer it to freezer-safe containers up to 3 months. To reheat, thaw in the refrigerator overnight and warm it on the stove.
I LOVE anything Pumpkin; I cannot WAIT for FALL! :)

I made a casserole today that was ‘different’, but quite good. It’s a sweet potato & sausage ‘breakfast’ casserole, but you could eat it any time.
I was looking for casseroles without dairy (cheese, sour cream, cream cheese) & they are few & far between, but this is one of them.
Ingredients are few:
Sweet potatoes, diced & roasted
Sausage*, fried
Onions fried (with sausage is fine)
Eggs (8)
Half cup of coconut milk, Lactaid, or regular milk if you can tolerate it
Spices
Of course, I made a few changes:
Instead of 2 sweet potatoes, I used 3.
Instead of a half pound of sausage, I used a whole pound of plain ground pork. I used a sausage seasoning mix & added it to the egg mixture instead of the meat to better incorporate the flavor throughout the casserole.
All else was the same.
