I got some duck eggs at a Vietnamese supermarket. They are somewhat larger than chicken eggs, but they taste about the same. The only thing I don’t like about them is that the shell doesn’t easily peel off when you hard-boil them.

Hing: for hard-boiled chicken eggs, always wait till the water is boiling before dropping them in. That way, the shell will come off easily.

It seems to help if you also leave them in an ice water bath for at least 20 or 30 minutes after you boil them.

Hard boiled eggs in an Instant Pot:

High pressure cook 5 min.;
Slow pressure release 5 min., then manual release;
Ice water bath 5 min.;

EZ peel eggs--nearly with one piece of shell.

Have you ever had ballut? (sp.) Philippino’s bury them raw in the ground and leave them weeks. You have to eat them in the dark, but very tasty.
