I decided to post this because I am traveling over the 4th, and am tired of the discourse of US politics. Tired of "The Truth" on the bombing of Iran, I thought a quieter topic might occupy our thoughts over the weekend.
Is there any perfect BBQ in your area?

Any BBQ made outside of SC is basically poison. While there are many good choices in SC, I personally like Palmira Barbecue - West Ashley, Charleston, SC the best. Gooo oood.

We were travelling to Las Vegas a couple of years back and made it a point to stop in and try Rollin’ Smoke on Industrial or Highland, can’t remember exactly-but its behind the strip. There are a couple of others in town, one in Summerlin and over at the Pawn Shop—but the one we went too was fantastic in our opinion.
We in fact have gone to Rollin’ Smoke more than once and have enjoyed it. The sauces are vinegar based versus tomato—I like it, my wife not a real fan of vinegar based sauces...But she perserved and found one she liked. And she loved the Beef Ribs!

Rusted Silo in Lizton, Indiana has great bbq meats. Their sides are decent, but my Mac n cheese is wayyyy better.
On that list, I’ve been to Pappy’s in St. Louis. I think it was just fine.
Oldest son is coming next week with his family, and he has the bbq bug that’s been in my family for years. He makes a mean brisket but loves to try to his hand at bbq everything.
I’ll be making Mac n cheese, collards, and hush puppies with a special recipe that was recently given to me by a family friend. I’ve already tried it out, and they were GOOOOD!!!
I like my smoked Pork sliced. Not all the time but I like a choice. Most these days are either pulled or chopped. Many times no choice for either. I also like “outside meat”. Most joints don’t even know what that is. No outside meat, I guess it’s considered a waste. If I had to chose my last meal it would probably be Large pork sandwich, chopped with outside meat, BBQ baked beans, potato salad and a good draft beer. Sauce on the side.
Best sauce I've ever had. You can buy it online. I always keep a jug handy.
I live in Southern California, which does not offer much in the way of barbecue. Mom’s Barbecue, a shack on West Imperial Highway in Los Angeles, just off the 105 freeway about two miles west of Watts, is my favorite BBQ eatery.
Beef ribs or pork?
Brisket or burnt ends?
Is it the meat or the sauce that is more important?
Traditional or new school?
Each of those debates could rage for ages, and cause minor regional civil wars... There will never be a "best", because there are too many variables, and too many opinions. Everyone likes what they grew up with, mostly.
FOR ME AND ME ONLY, I prefer to focus on the meat (I can buy my favorite sauces at any time)... very tender and juicy... and while I LOVE a huge beef rib or three, it seems like pork should be the only ones used for judging... brisket is excellent when done right, but it should be ribs that are the focus for "THE best"... and I've never found a vinegar-based sauce that I preferred over the tomato (aka sugar) based sauces.
Best beef ribs I ever had were in a tiny town in central Oklahoma (Smoking' Joe's Rib Ranch in Rush Springs OK... only 4 bones... and still took me 3 meals to finish)... and best pork ribs were from a trailer sitting in a grocery store parking lot in Lawrence KS. The "famous" places like Arthur Bryant's (Joe's in KC?? Really "Food and Wine"??) are okay, but they honestly never have lived up to the best you can find in the right (aka wrong) areas of town, or in small cities in the middle of nowhere.

I like Central BBQ, Interstate and Germantown Commissary in the Memphis area. Best ribs I’ve had were the Porkasaurus practice ribs at the BBQ competition.
I’ve been to different Bar B Que restaurants in different states. The best was a place in Colorado. Very rustic woodsy place. Hickory House in Parker, Co. Other than that, my son Todd, in Texas, makes the best Bar B Que. Why would I spend money at a restaurant?
Been to Stanley’s in Tyler, Texas, and Dreamland in Tuscaloosa, Alabama. That will keep me for a while.
