Paella is Spanish (Valencian).

Its a rice dish. It does require some special equipment to do right, and most recipes call for saffron (azafran). You will find paella in the Philippines sometimes, but thats a Spanish influence.

In Spain paella is tourist food for the most part, which is sad.

I was surprised to find it in a Martin Marietta pot luck in Bethesda Maryland in the 1980's.

I’m surprised to find a reference to Martin Marietta in Bethesda in the 1980’s! :). I bet my dad was there. :).

Dad was an amazing man…passed away 14 years ago last week. Warmed my heart for that nanosecond seeing the words “Martin Marietta” again. Grew up with those words. Thank you.

There are SOME Filipinos at her hospital, but a lot of white people as well, and they ALL love her cooking. (As do I).

Similarly, lumpia is just a small egg roll. I miss lumpia but not pancit
