Paella is Spanish (Valencian).
Its a rice dish. It does require some special equipment to do right, and most recipes call for saffron (azafran). You will find paella in the Philippines sometimes, but thats a Spanish influence.
In Spain paella is tourist food for the most part, which is sad.

I was surprised to find it in a Martin Marietta pot luck in Bethesda Maryland in the 1980's. I’m surprised to find a reference to Martin Marietta in Bethesda in the 1980’s! :). I bet my dad was there. :).

Dad was an amazing man…passed away 14 years ago last week. Warmed my heart for that nanosecond seeing the words “Martin Marietta” again. Grew up with those words. Thank you.
