Our next door neighbor brings us his homemade venison jerky every year at Christmas. We anxiously await his gift. It disappears very quickly.

Yeah, we often give a pound or two of venison jerky to each of our guests at our yearly Christmas party.

It seems to be welcomed as no one has ever turned it down.

We do a light smoke, light salt and usually nothing else.

The St. Regis Travel Center in St. Regis, MT has the most incredible selection of craft jerky from Montana I've ever seen. I'd be surprised if they don't have ONN jerky.

I think they have one entire aisle of different types and brands of jerky. I've got several bags around here someplace that I picked up our last visit there in September (we were on our way to Whitefish, Glacier, Waterton, Calgary, Canmore, Banff and Lake Louise).

December 6th this year. We generally do it a week after Thanksgiving before things get too crazy.

Rats! That’s the same date as another Christmas get-together with old friends that we rarely miss. We go back to Ohio and see lots of old friends at the gathering. I hate to miss it! Y’all have a ton of fun!

Ohio? My dad's family is from the Hocking Valley area.

We make a big loop trip every summer to visit family, Indiana, Illinois, Kentucky, West Virginia, Ohio and home to Michigan.

Personally, I don’t need anyone to tell me what beef jerky is good or bad...I eat it, and I know what it is for me...:)

Love Hocking Hills! I’ve spent a wee bit o time there. Love hiking over there, especially in the Fall. Our youngest spent a LOT of time there with his best friend’s family, and has to get his fix in every year. He was just there a couple of weeks ago for a couple of days with his girlfriend. She’s from Pennsylvania and loves it there in Columbus. We will probably get to see them on the 7th.

I like venison best also. A few months ago I had a lot of dove breasts in the freezer, so I tried dove jerky. It was edible but not very good.

Haven’t tried dove, but snowgeese and duck Jerky is good. But mostly I grill/smoke waterfowl.

Here’s my go to jerky marinade.

1 cup red wine.
8 Tblsp fish sauce.
Loads of fresh cracked black pepper.

Marinade sliced beef overnight and then process in dehydrator.

Yum.

I use a modification of the recipe that came with my Excalibur dehydrator 20-some years ago. The current version, more or less:

Equal parts (about 1/2 cup each for 5-6 pounds of meat) ketchup, sriracha, Worcestershire sauce, and soy sauce.
Plenty of black pepper.
A good bit of garlic powder.
Some allspice, some onion powder, and maybe some cayenne.
A dash of liquid smoke.

I’ve experimented with adding ground cumin (not bad), ground ginger (meh), or curry powder (horrible).

Marinade 12-24 hours, stirring a few times, then dry the meat to where a strip will bend just a little but not snap immediately, and has no give when squeezed. I usually keep it in the fridge anyway.

I love my Excalibur. Got the 5 tray from Craigslist for $50. Worth every penny.
