You got that right. I had some Parmigiano Reggiano on excellent spaghetti and was spoiled forever.

That vile stuff in the green cardboard can should be labeled “cheese product” like the oil-based yellow slices are.

I am very fortunate. Here in Upstate NY, my local Wegmans supermarket has Parmigiano Reggiano and Locatelli Pecorino Romano, my two favorite cheeses for grating and slicing with crackers. Yum!
