They are Lamb testicles. The best ones are from young lambs.

In Australia, ‘lamb’s fry’ is just sheep’s liver. I think it’s the same in Ireland.

Also known as "Rocky Mountain Oysters"

When we went to visit our kin in Arkansas from Cali, when I was a kid. There was one of my uncles there who had a big gallon jar of RMO's in the frig... He loved em', ate them right out of the jar. To my understanding they were goat balls, not lamb.

When I worked on the family farm at about the age of 17, I recall when we would turn our young bulls into steers. The young bull would come down the wooden cattle chute and a couple of vertical posts would be brought together behind his jaws to keep him in place. At that point, one person holding a very large, wicked looking Case knife would give it a swing, while another person standing by would inject a cow-sized dose of antibiotic just as the newly-minted steer was released to continue down the chute to a holding pen.

The whole time some little kids that lived nearby would be squatted beside the cattle chute with a shoe box where they deposited all the fresh "mountain oysters" to take home for frying.

I would never eat such a dish! Disgusting!

Now bull testicles... That's a different matter! But lamb? Never!

Oh, I’ll try just about anything once, if it’s clean and cooked well. I’ve had kidneys, heart, brains, tripe, sweet breads, tongue (my favorite), and I would try mountain oysters or lamb fries, although I might feel sorry for the creature that lost it’s jewels.

A man and wife came out and castrated two hogs I had. They kept the testicles for cooking.
My dad bought some meat in 1960. Mom cooked it up but dad never said what it was. I remember it had a spiked ball of gristle in the middle.

Well, on our tenth wedding anniversary, my wife and I went to Greektown *The Parthenon, 314 Halsted) and ordered (ahead of time) a lamb’s head. The brains weren’t bad. I ate the eyeballs, my wife couldn’t take it that far.
