I hate the oil wasted with some of these recipes, too. I have a Misto oil sprayer that does a great job:
Cabbage wedges, mushrooms - YES! I LOVE Red Onion wedges in the mix, too. :)
I don’t have a pressure canner; still do it all Old School.

I was in Basic Training in 1978 - all of my DIs were Vietnam Vets and amazing soldiers/individuals.

Loved those guys to the Moon and back. I’m sure it was somewhat of a PITA for them to have to train us young women, but I felt I got very good training, all the way around.

What a great career! And then you managed a garden center. Hubby was an E4. He volunteered 3x for Vietnam but they sent his class to Panana for a year and then Alaska for a year. Every other class got sent to Vietnam. He was a watercraft operator. Think Apocalypse Now. He scuba dived a lot in Panama in his spare time. He worked on a ship in the canal that was a nuclear power source. In Alaska he helped tear down a nuclear reactor.

The roasted vegetables theme is very good to have at this time of year. I don’t do a lot of roasting in my oven during the warmer summer months. We grill as much as possible then, but now in the Fall, roasted vegetables are very comforting. Great idea!

You have a choice between a medallion (3 sizes) or the larger metal plaque type that can be used as a headstone. Most folks end up with a private headstone (like dad, so mom can be on it, too) & then the large metal plaque ends up being a ‘foot stone’.
The plaque, when used as a foot stone, really needs to be set in a concrete base or on a granite base. There was one in the cemetery that was on neither, just in the grass - mower had hit it & it was all bent up - not good & a tripping hazard, too. The others were not looking so hot either - the bases were chipped or uneven, or not set in line with the headstone - sort of off slightly to a side, or whatever. The only thing on the plaque that is not on the medallion is the person’s rank/rating, etc. (whatever you call it).
When mom & I decided on the medallion affixed to the headstone and we took it to the monument company, I asked the guy how many got medallions and he said 1 in 50, most go with the larger plaque. His feeling and mine, was that most people don’t even know about the medallion. The actual template for carving the headstone was run off while we were there, so we could make sure the spacing, size of the cross, lettering, etc. was exactly how mom wanted it - he then took the medallion & held it on the template so we could see where we wanted it & he marked it. It looks great and we are happy with our decision.
My cousin’s wife/widow, who put the flowers on dad’s grave for Veteran’s Day, is having his headstone done at the same company. He is also a vet (Air Force) ... she is ordering a medallion from a private company that will have his rank on it, not the one from the VA.
Thanks. That is the size I was leaning toward. I have been staggering planting times in my garden to spread out when things like green beans need to be picked, but I get overwhelmed. In the meantime I will be blanching and freezing, but I will run out of freezer space pretty fast and will need to get a freezer for the garage.
We have a freezer that works well in our garage. Most freezers don’t like colder temperatures.
Mr. mm says he thinks it’s a GE and considered garage friendly, IOW, it’s designed to work well in cold but not freezing environments. It’s big and a chest freezer and is wonderful.
I found this seed source last year, their seeds performed great this year, and their prices are better than other places. I placed a much larger order recently, for seeding this coming spring. They ship quickly and at very good shipping rates, unlike some seed sellers.

There’s a technique that I’ve read about, but never actually tried it:
Let your vegetables air-dry after cutting them, just enough that the surface is no longer damp.
Take a deep dish, fill 2/3 with water, then “float” your oil over the top of the water, enough to cover the entire surface.
With a slotted spoon, take your vegetables a few at a time and lower them through the layer of oil, then pull them back out and do the next few. If done right, this should result in a thin coating of oil over all the vegetables, with only a little oil left over.
Again, I haven’t actually tried that, but I think it might work.
