And there’s no better “comfort food”, than Macaroni and Cheese. I limit myself though to it only a couple times a year.

Cause it’s gross. I swore off that crap 30 years ago, I respect the concept of cheese too much to eat the fake slices. Same here, why anyone would put American cheese on anything baffles me. Sharp cheddar is superior in every way.

But most people do not know the difference.
The only good point in the article it that they are taking the cheese out more and more and substiuting seed oil. Which and neither tasty or good for you. Coffee Mate has done the same thing recently with their "Natural" liquid creamer. It used to be milk, cream, sugar and flavoring. Now it is soybean oil and some sort of gum. I no longer buy it for the office refrigerator.
Real food is good for you. This other stuff, not so much.

That Velveeta block stirred slowly with a can of Ro-tel tomatoes and a bag of restaurant-style tortilla chips was a staple at parties in the 80s.
Throw a can of Campbell’s cheddar cheese soup in there for added tanginess. (Do they even make that anymore?)

Way worse than the fake cheeze problem that was foisted on us is the hideous
FDA approved poison they call "Corn Syrup", you can hardly get away from that chemical based crap, they put it in everything from peanut butter to gasoline .
the BIg Soda gangster/racketeers are guilty of pushing this corn crap poison on us WITH THE POLITICIANS HELP by strong arming supermarkets to MAKE them dominate market shelve space (or else) .
Diet sodas are pure poison, its survivable, (but so is the "vax"), that doesn't mean its good, main noticeable symptom is vertigo.

My FIRST BEER was a Schlitz.
Was given to me to drink as a adolescent. Tasted AWFUL!🤢
Perhaps that is why I never developed a ‘taste’ for beer like my peers did.......................

Thanks for the tip, but no. My mind still knows I’m eating cheese, and I may psyche myself into feeling the indigestion anyway. The alarm bells will be ringing anyway. I’ve learned to just do without it, unless a little is mixed into some pasta sauce.
I still know how to use cheese if preparing food for others though. I haven’t forgotten about Monterey Jack and Provolone.
