Cheese, like bacon, has a tendency to improve almost everything.
At it’s core, at the center of the earth, is a ball of spinning bacon, surrounded by a molten globe of cheese.
I bet I have over a dozen different cheeses in my deli drawer right now. It’s a weakness for me, for sure.
Since I was a kid, Velveeta has been a very popular product and I once enjoyed it. But today, it upsets my stomach and not knowing why. It turns out that Kraft changed its formula (I don’t when):
“Originally Velveeta was made from real cheese. Today, it’s mainly whey protein concentrate, milk protein concentrate, milk, fat, and preservatives. By the Food and Drug Administration’s standards, that’s not real cheese—which is why the FDA forced Kraft to change its label from “cheese spread” to “cheese product.”

But today, I see that Velveeta remains to be a popular product on the store shelves. And as far as I know, it is the only “cheese” product that does not require refrigeration.

(Maybe someone with more medical background than I have can help interpret the data regarding risk. An increased risk of 53% sounds large, but the original study characterizes this as only “marginally significant.”)
