Liver needs to cooked properly. On a bed of Onions with a stick or two of Butter. DO NOT let the liver touch the pan. Serve with Brussel sprouts and you won’t believe how good you’ll feel the next day.

You forgot “marinate in cold buttermilk for at least an hour if not four”.
DO NOT SALT or brine the liver.
