I froze a bunch of red peppers to use for this last time you mentioned it. Came across them in the freezer the other day!

Someone commenting on another blog post regarding pressure canning pimiento peppers, said they roasted a red bell pepper & used that to make delicious pimiento cheese. I am going to have to try it - love roasted red peppers.
Had a little cry thinking about my grannies - really missing them while reminiscing about their gardening & canning. Both were fantastic cooks, even though their cooking styles were different.
I looked up recipes for roasted red pepper “pimiento” cheese & there are quite a few! I am definitely going to try it - roasted red peppers will be easier to find (I saw them while looking for pimientos the other day) & probably cheaper. If I like the way the roasted red pepper cheese spread turns out, I will not be growing/canning pimientos!
