I looked up recipes for roasted red pepper “pimiento” cheese & there are quite a few! I am definitely going to try it - roasted red peppers will be easier to find (I saw them while looking for pimientos the other day) & probably cheaper. If I like the way the roasted red pepper cheese spread turns out, I will not be growing/canning pimientos!
If you have a Dollar Tree/General nearby, they sell jars of Roasted Red Peppers for $1.25. Sometimes they’re hidden on a bottom shelf near the pasta and spaghetti sauce, but I always look for them, when I’m there. ;)
