Cut up Peppers can also be done that way; they might get a little watery though. You can spread them out on a cookie sheet and freeze that way

I peel cucumbers, remove the seeds, cut them up like pickle spears, freeze on cookie sheet. Slice them for salads, etc. Use immediately while they are still frozen and crunchy.
