After 10 years struggling for light and airy bread. Voila. My cast iron Dutch oven preheated to 500. Bread baked at 450. Rivals a bakery.

I used pressure cookers for years, but InstaPot is ten times as good. Makes the most amazing food quickly.

I’ve got a Lodge camp Dutch oven that is made for use in the great outdoors. Has feet, a wire handle, and a tool for moving it around. It’s great for making cobblers. Used to use if for that at Sebring and Road Atlanta, and was very popular with my neighbors. Just uses a few pieces of self-starting charcoal.

I’ve also got a big 8 qt oval Kirkland (Costco store brand) Dutch oven that I think is made by Staub. It’s great for making beef bourguignon.

The bare cast iron stuff is made at the foundry in South Pittsburgh, TN. The enameled cast iron Lodge is indeed made in China. I had a nice chat with the president of Lodge about that at an event, maybe 15 years ago. The bottom line is that EPA regs made doing the enameling here prohibitively expensive.

The dutch oven with the flat rimmed lid is incredible for cooking biscuits.

I use my Dutch Oven at least three times a week.

Here is my favorite thing to do with it and all you need is a whole chicken, some seasonings and a couple of sweet potatoes.

Slice up the sweet potatoes into thick slices. Coat both sides with olive oil and add pepper and salt. Then lay them across the bottom of the Dutch Oven while preheating oven to 400 degrees.

On stovetop, cook on medium high for exactly 7 minutes. Do not flip the sweet potato slices over. Meanwhile, season the whole chicken with salt, pepper, thyme, garlic and paprika. Make sure you get those seasonings in the cavity too. Then tuck a few pats of butter under the skin in the breast area.

After 7 minutes, lay seasoned whole chicken on top of the sweet potato and put in 400 degree oven (uncovered) for one solid hour. If your chicken is larger than 3-4 pounds, add 15 minutes for each pound.

The result will be a perfect dinner.
