It sounds as if you have more options than most, but it still comes down to supply and demand of unjabbed women in your area if you want to date like a normal person and see the woman regularly versus doing the long distance thing.
I really wouldn’t worry about the tricked once part. If a lightbulb has really gone on off in her brain and she sees what she didn’t see before this will be evident (or not) as you talk to her more.
I used to be much more materialist than I was and watched far too much television, but once I realized who was controlling that and why I stopped all that.
I would be more concerned about medical risks to her from the jab and how it would impact your relationship to see her suffer.
Not to be crude, but I do not think unjabbed men have as much to fear from jabbed women due to the nature of how sexual intercourse works. It is the same as men not having as much to fear from HIV-infected woman as vice versa.

Mistakes?...meh...shrug...we all make them. Humility demands that we own them, repair the damages they may have caused and move forward. I’m good with that.
But the medical aspect, as you clearly laid out (pardon me for that one) are the crux of the real issue.
Up until now, this aspect has seen very little attention, but, in my view, is a potential real concern worthy of at least considering and looking into. It’s why I asked what I did.
