Sauce on the Side Has Big Plans for National Calzone Day

Monday is National Calzone Day, but we are celebrating today. A calzone is a folded pizza hand pie, with garlic and butter infused dough stuffed with your favorite toppings. It originated in Naples, Italy, and St. Louis is fortunate to have seven locations to get a calzone from the restaurant “Sauce on the Side“. Dan Porzel, one of the owners of Sauce on the Side was our guest today to talk all things about Calzone. Find a Sauce on the Side location here. A local pizza joint has great pizza and great calzones. I have to limit my trips to that pizzeria, otherwise I would be as big as a house instead of the svelte shed I am now. ; / )

The calzone I see here look like baked panzerotti. This is the calzone I'm used to in Italy and the way I make it here.
Here is a recipe:
Calzone di cipolle pugliese Instead of beer/water, my recipe uses white wine that is warmed.
Panzerotti are fried and look like this:

I avoid the ones from the chains, local only. The family, from Brazil, that owns the place really puts effort into making everything great. Quality is assured.

Ask around and see what locally owned place is most recommended. I stay away from the chain restaurants. They sacrifice quality for consistency.
A good local joint will stress quality, taste and service.
