We make homefries with it.
Dice up some potatoes and onions.
Start frying the potatoes first, so they can cook some.
Add the diced up onions and fry until cooked.
Season with salt and pepper.
I’ll be over Saturday morning. My Dad was an expert in cooking them that way.
O do about the same but use 50/50 bacon grease/olive oil or bitter/olive oil if we don't have bacon grease. Butter by itself will just burn.
There are lots of things I can’t get away with as far as bacon grease goes. My wife, who is a wonderful woman, seems to think all things bacon will clog every artery in my body. Yet she will grab two eclairs for breakfast and act like its a healthy meal. I love her deeply but gee whiz!
Spring beets, the small ones with the greens still attached. After cooking onion in bacon grease, throw in the beets and cook. Add a shake of sugar and a dash of cider vinegar. Grandma served this many times. DH always had a can of bacon grease with him when fishing as a kid. He and his buddy would fry up bullheads (called them bloodheads) for their dinner.
