Young people don’t know that you are supposed to fry the eggs in the bacon grease? These are truly the End Times.
I broke her of that habit
While the steak is in the oven, I cut some bacon into bits and then cook it in the skillet for a baked potato. The rendered bacon fat is what I sear the steak in when it comes out of the oven.

Put the grease in your garden in the spring and rototill it into the dirt. Your plants will love you.
My grandfather used to do that with leftover fat and he would also get a fish at the beginning of spring for his garden and the vegetables were huge.

I’ve read about the basting thing where you ladle hot fat onto the yolk, but I’ve never done it, and I’ve never really felt the need to. Seems just a little too foodie-ish to me. But if I remember next time maybe I’ll give it a shot.

I made my first batch of chicken schmaltz today. Saved up the trimmings from about 15 lbs of chicken thighs. Came to about 2 lbs of chicken skin. Rendered the fat for just over a cup of pure fat. Further crisped up the skins with onions to make gribenes.
Breakfast:
1. Bacon
2. Eggs fried in bacon grease
3. Bisquits made with some of the bacon grease
4. Milk gravy made with the rest of the bacon grease
Probably not a good name for it right now, but frying eggs by flipping the bacon grease over them to cook the surface of the yellow is called “masking” an egg. My family has cooked them that way for generations.
I buy bacon ends from the butcher to render the fat and collect the lean “bits”. I always have a pint jar of grease in the fridge and a pound or so of bits in the freezer. My Mom always had a crock of old grease on the back of the stove. That practice scares me.
Fry or season stuff in the grease or use it to replace lard/”Crisco” in baked goods. Add the bits to vegetable sides, cornbread/biscuits, salads, etc...
And yes, I am a Southerner.
