I actually thought about that today. I usually buy a grapefruit and several lemons each week @ grocery trip. I sliced a chunk of lemon off for some tea and that thought came to me—Guess I’ll have to buy a big bunch and freeze the rinds.

Because you can make Quinine from grapefruit peel
Peel grapefruits and slice the peel.
cover with water and simmer for a couple of hours
Do not remove the lid of the saucepan at any time....keeps Quinine vapor in.
When cool, add honey or brown sugar for taste.
