You probably take your tongue for granted, or at least, don’t fully grasp the complexities of how it deciphers the flavors it encounters and sends those delicious or distasteful signals to your brain.
This is all the more important because things don’t always taste the same to different people. In fact, when it comes to the herb cilantro, the fresh earthiness you taste might actually taste like Palmolive or a fragrant bar of bathroom soap to someone else. There is a lot to wade through when it comes to common myths about food, but the idea that to some people, cilantro tastes like soap is no outlandish rumor.
Why cilantro tastes like soap to some people Whether you taste a mouthful of antiseptic when you chomp into a bite of cilantro-rich salsa comes down to a roll of the genetic dice. Specifically, it come down to the aldehydes—organic compounds in which a carbon atom shares a bond with another atom or group of atoms, per Britannica— found in cilantro, which are often used in various perfumes and cleaning products, owing to their pronounced fragrances.
According to the Cleveland Clinic, the aldehydes are best detected through the olfactory receptors, which allow you to smell things. The organization notes:

I agree. I am allergic to it. I can only eat at some restaurants that don’t use it.
I preferred Lava soap.
Nice gritty texture that really cleaned those old taste buds off.
Then you had that pumice in your mouth for the rest of the day.
To me it tastes just like dish detergent.

This isn't how it works, it's not an antiseptic taste it's an actual full-bore pass-the-palmolive flavor. And deathly ill if ingested. It's a bummer. Chipotle I can kinda get creative and get around it, Qdoba forget it.
Pico de Gallo is one of the truly great culinary achievements of mankind. Especially when paired with tacos.

I hate the taste of cilantro, and I hate that many restaurants seem to want to add cilantro to many of their dishes...I had a piece of pizza that someone else ordered at Cheesecake, the darn pizza had cilantro on it, yuck, yuck. yuck.
I make a point of asking if ordering a spanish dish whether it has cilantro.
I inhale spicy foods, especially Southwest foods. However, when I first tasted cilantro, I too, thought they had not rinsed well. Pissed me off. Until the wifey fixed that! Now I love cilantro!
I accidently crunched down on a stink bug at a restaurant! It tastes like it smells!
That’s not how we do it in the Southwest.
Try this one:
1/2 cup chopped cilantro
1/2 finely diced onion
1 slicer tomato
1 large and hot-like-hell Serrano, finely chopped
1 clove of garlic minced
Juice of a full lime
Stir and let sit for a half hour, stir again and serve.
I love cilantro! When I chop it up, I lift my hands so I can smell it. Such a bright, yummy odor!!! I use it in soups, meatloaf, roasts, all sorts of things. But, only when I can get it fresh and it smells strong.
Had it ONCE...it does taste like dish soap. Had to spit it out ....never again!
A little olive oil don’t hurt.
Nor does 1/2 a vidalia onion.
But here’s what you really need:
skip the vinegar and squeeze a lime or two.

I prefer the golden Dial flavor. It was what momma used to wash my mouth out when I talked dirty.
coriander is the seeds. cilantro is the leaves and stem. I don’t like coriander either.
I love limes!! Yes, I do add when I have some on hand.
