
These are the cowboy pork chops. I tried looking up the name and it looks like cowboy pork chops in other places are just boneless thick pork chops. You can tell these look a bit different. They kind of have a steak look to them. And that roundish part in the middle, oh my gosh, that is so tender. Hubby cooked them on his barbecue that is fed by pellets and has a wee bit of a smoke flavor, they turn out so good on that. And the best part is I don't have to do anything but side dishes. Today was a salad and leftover polenta. So I did as little as possible :-)
