I break it up into sizes that I will most likely cook and freeze it in ziplock bags.
That is the best way to store bacon, because it thaws in an instant and keeps indefinitely.

What is leftover bacon? Is that even possible?

I typically cook up extra bacon and toss what remains into a ziplock incase I need it on a sammich for lunch, or on a baked potato for dinner, or just to stick in my mouth for no damned reason at all.
I don't know how long already cooked bacon lasts in the fridge, but I know it still tastes great later in the day, and even the next. I would be it could last weeks if it weren't somehow eaten.

I do something similar.
Get the bacon fresh from the store and saran wrap 4 pieces at a time, then freeze it flat.
A frozen bacon slab is a pain to separate from the brick.
