Since the shroud is a frontal image, the nose is basically just a guess.

The Shroud image suggested a severely broken nose. Consistent with Scripture and the beating He suffered before crucifixion. This "mock up" more resembles the usual carved images set behind countless Catholic altars of Jesus on the Cross, legs bent and to one side included, but with arms folded and a few splashes of red.
One telling difference between the Shroud and traditional representations is that the wounds caused by the nails were in the wrist and not the palms of the hand. The former would have been how an actual crucifixion was done. Can't really tell from the photo how it's shown on the model.
