Un-Magical Fruit -- Beans, Beans Which Don't Cause Gas

Beans aren't inherently gassy, it is damaged protein from over-cooking that causes the unintended effects. Minimize cooking damage by most efficiently processing beans. It takes a cheap "corn mill" and a pressure-cooker.

Cracking un-washed beans in a kind of dry grain mill for "meal" not "flour", then washing them after cracking, soaking in hot water for a short time, then pressure cooking. The taste is like potatoes, the most gas-prone person won't experience the unpleasant effects.

The cheapest, steel-plate (vs. stone), "meal" (vs. "flour") mill, that will process whole corn, dried whole hominy (softer than corn), and brown-rice-meal (great for waffles), is Mexican made, especially for corn. A more expensive, easier to use "meal" grain mill is by Kitchen Aid, rated by the "Organic Gardening", Rodale Press as the best machined, best made grain mill.

A great video on buying a higher-end pressure-cooker. European-made, more recent ones, lack a top weight, they have interlocking handles and heavy-duty gaskets. But you can get a cheaper, older American made-one at a thrift store, but you have to have the detachable, therefore, lose-able Weight on top, don't buy without one.

do you have any info on how that bean is less gassy?

I don't have an actual lab analysis yet, I'm planning to get one when I'm a little closer to making it machine harvestable. But I can tell you that I have never gotten gas from them. And I'm the kind of person who will get gas from any member of the legume family, except for this one. My family members who have eaten it also didn't have the side-effects that normal beans would give them.

Red Beans

1 lb Camellia brand red beans (these are grown in Louisiana, they are the absolute best. If you have to order them online it would be worth your while.) or other dry red kidney beans.

Soak in cool water for 12-24 hours changing water at least twice. Rinse before cooking.

1 Large yellow onion chopped
1-1 1/2 pounds seasoned, smoked pork sausage cut into 1/2” links
2 cloves garlic crushed
1 tbs garlic powder
1 tbs black pepper
1/8-1/2 tbs cayenne pepper (a little goes a long way)
15 oz can crushed tomatoes
1 small can tomato paste
2 tbs Kosher salt
1-2 tbs Creole seasoning, Zataran’s or Tony Chachere’s
(Be careful, you are adding additional cayenne pepper and salt)
3 bay leaves

Add beans to 6-8 quart crockpot, cover with water
Cook on high for about and hour. Add a pinch of dry ginger

Add all other ingredients, add water to cover. Stir til well mixed. Continue cooking on high for 4-5 hours. Reduce heat and simmer for another 3-4 hours.

Taste test for saltiness and seasoning. Cayenne pepper is a natural flavor enhancer. The beans should have enough seasoning to produce a warm glow in your mouth, or scorch you depending on your preference. I like them slightly spicy. I usually add 1/8 tbs cayenne and 11/2 tbs creole seasoning.

Server over white rice.

Thanks- will keep an eye out for them then- I love beans but they don’t love me- they also cause me the runs unfortunately-

My late wife and I used to drive through Dove Creek, Colorado
twice a year. They had a sign at the entrance to town that claimed they were the pinto bean capitol of the world. We used to buy twenty pound bags of pintos there.

Soak for a minimum of 12 hours. Change the water at least 4 times. Throw in Kombu when cooking. The piano becomes a harpsichord.

Never buy a cheap pressure cooker, especially the ones with a silicone gasket. They’re incredibly dangerous.

Spend the dough and get one that’s metal to metal.

Thanks to my Instant Pot, I can now cook both brown rice and beans perfectly any time and every time I want to.

Lots of good info about beans here: Instant Pot 101: How to Cook Legumes, along with soak and no-soak cooking times and this about soaking:

The main benefits of soaking beans beside a significantly shorter cooking time include the reduction of anti-nutrients such as phytic acid.

These anti-nutrients can bind to the nutrients found in beans naturally, preventing our bodies from being able to fully absorb them.

Moreover, the soaking process makes the legumes easier to digest. As you might know, beans can wreak some havoc on the belly and cause bloating/gas. A

void this with a soak!

Alternatively, you could cook up a batch of totally "fake beans", made out of very teeny, tiny, beef meatballs.   That should serve to greatly reduce a significant quantity of the extraneous, noxiously malodorous farticulations you usually experience when you take a chance and try to use real beans instead of beef ones.
