Red Beans
1 lb Camellia brand red beans (these are grown in Louisiana, they are the absolute best. If you have to order them online it would be worth your while.) or other dry red kidney beans.
Soak in cool water for 12-24 hours changing water at least twice. Rinse before cooking.
1 Large yellow onion chopped
1-1 1/2 pounds seasoned, smoked pork sausage cut into 1/2 links
2 cloves garlic crushed
1 tbs garlic powder
1 tbs black pepper
1/8-1/2 tbs cayenne pepper (a little goes a long way)
15 oz can crushed tomatoes
1 small can tomato paste
2 tbs Kosher salt
1-2 tbs Creole seasoning, Zatarans or Tony Chacheres
(Be careful, you are adding additional cayenne pepper and salt)
3 bay leaves
Add beans to 6-8 quart crockpot, cover with water
Cook on high for about and hour. Add a pinch of dry ginger
Add all other ingredients, add water to cover. Stir til well mixed. Continue cooking on high for 4-5 hours. Reduce heat and simmer for another 3-4 hours.
Taste test for saltiness and seasoning. Cayenne pepper is a natural flavor enhancer. The beans should have enough seasoning to produce a warm glow in your mouth, or scorch you depending on your preference. I like them slightly spicy. I usually add 1/8 tbs cayenne and 11/2 tbs creole seasoning.
Server over white rice.
