Sounds improbable to me too grey. Flu—they give you IV fluids-not usually blood. 500/day—do they have that many gun shot victims? Operations? Puzzling.
Two pints in a quart, four quarts in a gallon, an adult human has on the order of two gallons of blood.
Surgeries and / or trauma victims might need more: possibly (hand-waving) up to 12-16 units of blood.
Don't know about lesser procedures.
But the other issues are blood donated but rejected (e.g. certain people cannot accept blood if the donor has cytomegalovirus); and of course, donor/acceptor mismatches. Type O, and more specifically, O- is highly prized as it is a universal donor, any can receive it.
But most donors aren't O or O-.
I once got a pair of free symphony tickets for donating blood during a shortfall.
And apparently each pint of blood is sold for ~$500, I think I remember Q mentioning to look that up, or maybe it was an anon.

sounds kinda like the tainted blood operation bubba had going at Arkansas state pens
the Arkansas blood plasma operation targeted the inmate population & many there were infected with Hep C & HIV
inmates were paid a little “walkin around money”
could be about same market potential with homeless in SF???
