I have taken a break from my owl research to dig into the fascinating Q topic of grits. I found a doozy of a video of court testimony on the subject. But first, a home movie of the time me and my hot wife visited Hojo Hominigrits for breakfast.

To wander the hallways of your mind would be like a trip to the Smithsonian, it would take days to see everything, and recover from some sights seen there.

On the subject of grits. Which ones you buy and how you cook them does matter.

If the package doesn't say 'Stone Ground', put it back. Measure your 1x grits and 2x COLD water and 2x milk in to a pan. Add 1 tsp salt. Stir lightly and let sit 5 minutes. Skim the top with a fine mesh strainer.

Turn the heat on high and whisk slowly for 5 minutes. Reduce heat to simmer and cover for 15-20 minutes.

This will produce extremely smooth and creamy grits.

Enjoy.

BTW - While grits and polenta are both made with ground corn, they are NOT the same product.
