If the package doesn't say 'Stone Ground', put it back. Measure your 1x grits and 2x COLD water and 2x milk in to a pan. Add 1 tsp salt. Stir lightly and let sit 5 minutes. Skim the top with a fine mesh strainer.
Turn the heat on high and whisk slowly for 5 minutes. Reduce heat to simmer and cover for 15-20 minutes.
This will produce extremely smooth and creamy grits.

BTW - While grits and polenta are both made with ground corn, they are NOT the same product.

Desperately seeking habanero for another lonely can of pineapple. Seems they’ve disappeared in the two gringo grocers(seasonal or bad grocers?) I’ve checked.
Haven’t been by a supermercado yet. But I’m going to.
