I’ve been wondering what to do with all those green and red peppers coming in from the garden.

I'll gas the truck up and swing by later today to relieve you of your burden!

Nothing I love more than sweet peppers!

Fried peppers, pepper & egg sandwiches, sausage and peppers, peppers in salads!

You’re welcome. All I have! I have been freezing bags and bags of them. He’s adorable little to foot tall pepper plants I just about falling over with the huge peppers they have on them. I don’t think any of my other crops have been so productive.

Oh, here’s a couple ideas I have for meals this week with the peppers

Fajitas
Pork chops with peppers and polenta
Stuffed peppers, of course
Peppers and tomatoes (also from the garden, the very last of them) and sausage over rice

Thanks for the addition of your ideas!

Chop them. Place them on a cookie sheet and keep in a freezer until frozen. Place the frozen green peppers in a freezer bag. Label with date. Use as needed.

The green peppers stay firm all year. You can even run them briefly under cold water and add to a fresh salad. You can also do the same for cucumbers (deseed and cut into pickle like slices).
