I love that cookbook!!! I need to get mine out, it’s been awhile. I got a frozen meal for lunch(early bus duty week & need to leave @ 6:25) & I thought it was a Chinese brown rice thing, but it was barley. Very chewy & delicious.
That soup sounds wonderful.
I make a cream of barley soup, but mine’s simpler. Simmer the barley in chicken broth until tender. Add a can of cream of chicken soup. Bring it backup to a boil. Done!
If you toast the barley in a dry pan first, it adds and extra dimension to the flavor.
Barley is a great grain for strength. Pops always threw a handful of barley in his chili and I do the same.
After Thanksgiving, Hubby always makes stock from the turkey carcass. Then I make turkey barley soup with some of the stock and the meat we get from the carcass. SO yummy.
I am still in my grilled cheese and tomato soup mood. This soup is from Lady Gaga’s parents restaurant and we like it very much.
