Cauliflower rice is growing in popularity as a trendy substitute for carbohydrates but the rice industry is upset over the product’s name.
Rice industry leaders say that calling it ‘cauliflower rice’ could be misleading and confusing.
In the rich farmland of California’s Salinas Valley, an often underrated vegetable is having its moment in the sun.
“Cauliflower is one of the hottest vegetables we sell today,” said Vice President of Green Giant Jordan Greenberg. “You can use it as a main dish. You can use it as a side dish.”
It can be bar-b-qued, baked, stir- fried and now Green Giant is shredding cauliflower into tiny bits, creating a popular substitute for rice with less than 15% of the carbs.
At the end of the day, consumers want to eat healthier but cauliflower is now the center of a controversy, in a tale of rice and men.
“ Do we need to call cauliflower rice,” asked rice farmer Matthew Sligar. “Riced cauliflower– I mean, why even call it riced cauliflower? Could call it– bits of cauliflower, or cauliflower crumbles. Secondly, when did riced become a verb?”
Convinced Americans should know more about where their food comes from, Sligar launched, “Rice Farming TV.”
Sligar worries “riced cauliflower” is confusing consumers and may have an impact on rice sales.
Even a rice farmer admits he can’t live by rice alone.
“But hey, I’ll be open with you. There’s a cauliflower in our refrigerator. It’s just a head of cauliflower,” said Sligar. “I’ll eat it. I’m not too excited about it, but I’ll eat it, yeah.”
What he won’t do is call it rice.
These days even rice farmers have Washington lobbyists and they are asking the Food and Drug Administration to define “rice” so not everyone can use the name.

I guess this guy doesn't cook much? Riced has been a verb for a long time. You rice foods with a ricer. The term can be found in many cookbooks.

Mashed turnips can be very nice, despite not sounding so nice. Mash with a little sour cream, a little horseradish and a little sea salt. Serve with dairy butter melted over them.
Wonder how long they had been saving that one up.

Turnips are not cauliflower. Turnips are edible ate many of them raw right out of the ground, of course food was a little more rare then, where I lived. I can eat cauliflower or broccoli if they are smothered in cheese, otherwise I don't care how healthy they claim it is, feed it to the chickens.
When I was a kid meals were very predictable, beans and potatoes with cornbread or hot rolls and occasionally corn that was so tough cows couldn't eat it.
Well, no they aren't. Didn't claim they were.
Brown rice isn’t rice either but I guess it suits the rice growers so THAT’S ok.
Fine by me. The rice farmers in Texas steal our water. Ok, they lobby big time and pay the legislature to take our water putting many businesses up stream out of business and draining city water supplies dry.
Sadly, our only grocery in town (HEB) doesn’t sell cauliflower. Unbelievable.
Yes, cost of cauliflower is much more than potatoes. However, have you considered some people can’t take the carbs in potatoes as it skyrockets their blood sugar.
Cauliflower can also substitute for a bread crust in things like pizza. Cauliflower is very versatile in low carb diets.
Don’t knock it if you haven’t tried it.
A teacher neighbor insisted her kids have some sort of cole vegetable every day. I told her to try mashed cauliflower. She totally freaked saying she’d never feed her kids a low car dish. Uh... ok... as if mashing a vegetable somehow changes it from serving it chopped.
We eat cauliflower rice a lot when we’re on keto like now. There is no “confusion” about it vs regular rice. It cost 3-4x as much as rice at the moment, so you only buy if you really want it.
Just call it “riced cauliflower.” Problem solved.
