mrsbutterfingers.com is a great recipe source. She once ran Roxy's Bistro. All of her recipes are tried and true. And she freely gives out great cheffy tips....like this:

CUTTING CANNED TOMATOES whole canned tomatoes are a better quality tomato than crushed or diced; use kitchen shears to cut them right in the can. Pureeing is a no-no---adds air and turns them an unappetizing pink. The best canned tomatoes are Italian. The best canned Italian tomatoes are San Marzano’s.

Here's Roxy’s Bistro’s signature soup. A restaurant favorite; they made gallons every week. Two important elements; use top quality Italian canned whole tomatoes; rich, flavourful home-made chix stock.

ROXY'S TOMATO BASIL SOUP

METHOD on med saute 2-3 tbs olive oil, fine-diced med onion w/ good sprinkle of salt, more grinds of black pepper than you think you need, and around 1/2 tsp red pepper flakes. When translucent (don’t brown please) add 2 fat cloves chp garlic; saute couple min. Put into lge sauce pan. Add generous tbsp dried basil, generous tsp dried oregano, 28 oz can whole peeled tomatoes (Italian), 2 tb tomato paste; reset to simmer while preparing roux. Melt tb butter; add four tb flour; cook a few min. Use wooden spoon to mix.

FINAL Increase heat a little. Add 2 c best chix stock; using balloon whisk, stir to thicken. Add to tomatoes; stir. Now add h/cream. Mix well. Pour into soup bowls.

SERVE garnished w/ sour cream, sprig fresh basil or flat-leaf parley. Pass bowl of sour cream.

I found a little 1958 book of French recipes in the thrift store today - it has a recipe for celeriac in Remoulade sauce. I’ll post it soon.

Was a diabetic during my pregnancies. Wrapped my sandwiches in lettuce. Easy and fun way to avoid carbs. Also sliced zucchini for lasagna noodles.

Had a wonky stomach for a while and didn’t even want to look at this thread!!! That was hard, LOL!

I’ve got a copy of Martha Washington’s cook book. I’ve got to get it out again and see if there is any thing interesting to post.

Did learn she had a bathing suit when she went swimming. Sounds like just a cotton slip! Sounds racey to me. LOL!

Love history and it repeats.

Sounds like they were thinner, white, and longer. When wet, I suspect verrrrry brusque!!!

They were probably way more wilder than the Victorians!

I’ve tried that lettuce sandwich, but that just didn’t cut it. So now I just have salads - deconstructed sandwich-LOL.

For example a BLT Sandwich. I put the mayo or miracle whip in a dish chop up a tomato and stir it all up while the bacon is cooking. Then I put some lettuce on the plate and top it with the tomato and bacon.

I toast a slice of the low carb bread and butter it and slice into 20 pieces and throw it on top. That leaves me about 10 carbs for berries for dessert or half a cup of whole milk mixed with water - tastes better than the skim milk I was drinking for the last 29 years. LOL
