An Italian senator presented a pizza makers bill Tuesday, which aims to create a professional registry of all Italian pizza chefs.
If successful, the bill will establish a nationally regulated pizza-making qualification, which will be recognized in all European countries.
The proposals would force aspiring pizzaioli to complete a 120-hour course made up of 20 hours of food science, 20 hours of pizza-making workshops, 30 hours of food hygiene and 40 hours of foreign languages. [ ]
According to the Forza Italia senator who presented the bill, Bartolomeo Amidei, the registry will protect the countrys culinary traditions and stop consumers from being sold substandard pizza.

Maybe I'll be excoriated but my idea of the perfect pizza is tomato sauce, very high quality mozzarella and a couple of basil leaves.

Absolute BS. Subject people to how much in expenses to make pizza?? Yes it’s an art to make a good one, and I make one of the best pizzas, so I know, but this is crap and an excuse to grow regulations and protect a syndicate.
I love all kinds of pizza. But the very best I've ever had was a plain cheese pizza. But the thin crust was perfect, the cheese blend was perfect, the amount of cheese was enough, the browning was right... Amazing taste.
You’re not kidding. About three years ago, I found a recipe, bought all fresh ingredients, and busted my butt for hours attempting for the first time to make a totally homemade American pizza.
Needless to say, I suck at it.

What idiocy. If they want GOOD pizza, come and get it in the US. Italian “pizza” is pretty pathetic.
When you are down to crust you dunk it in the oil and eat it it does not get thrown out

in two like a sandwich & wolfed it down. I still eat it
like an amateur.
I also love ordinary greasy New York pizza that is simply tomato sauce and cheap mozzarella stuck into a large oven until smoking hot before it's dumped into my cardboard box to take home. That, and the fake Sicilian pizza makes me nuts!
Since I'm dieting, I haven't had any pizza since March...

Oh, I get it! I’ll tell my husband about it. Generally, we feed very bad crust (which should be better in the USA) to the dog. Really.
I would love to be forced onto a plane to Italy to learn this art. Thats my kind of tyranny. While I’m there maybe they’ll detain me and force me to be trained in gelato making, jacquard looming, glass blowing, Ferrari building, etc.
I had a pretty good pizza at an out-of-the-way lodge in rural Vanuatu a little over a month ago.
Just goes to show that geography isn’t always an accurate predictor of whether expectations will be met or not.
My husband orders exotic types and I always order Marguerita.
