You heard a lot of organ music back then, right along with the guitars. This was especially so with songs done at concerts. An organ solo could soak up lots of time, enough for others to take a little break.

FWIW, we opened for Steppenwolf, with John Kay, back in about 1975 at Tampa Convention Center then again at West Palm Beach Auditorium. Savoy Brown was also on the bill.
Loved it.

Great song, but I’ll eat my hat if that was a live performance.
They are playing along to the record (which is what rock bands on TV shows commonly did back in that era).
It doesn’t deviate for the record by one note.
Listen to the very tail end of the song. There are TWO guitar parts playing (the rhythm chord & a high pitched single note solo). The band only has one guitar player.
