Caucus Night Beer/Wine Thread
Posted on 02/01/2016 4:50:31 PM PST by markomalley
What are you drinking tonight for the caucuses?
As for me, I'm working on a Vienna Lager that I just tapped a couple of days ago. Lagered for 3 months.
Recipe:
- 64% Vienna Malt
- 10% Carafoam
- 20% Pilsner
- 6% Crystal 120
- 1 oz Hallertauer (60 minutes)
- .5 oz Saaz (30 minutes)
- S-23 yeast
Primary for a week in the 50s. Then into the keg and in the back of the fridge for 3 months. Turned out smooth.
How about you all? What are you imbibing to help pass the time this caucus evening?

I put a chocolate Ensure in the freezer to get slushy.
Does that count?

One would think a good beer for the caucuses would be from...

Probably White Owl Whiskey. A rarity I can only get in Canada (duty-free shop coming back to USA), a properly aged whisky filtered to crystal clear (not to be confused with "white whisky" which is usually just un-aged).

And for Super Tuesday, I'm working on a cider.
- 4.5 gallons of apple juice (the cheaper the better as long as there are no preservatives in it)
- Red Star Cotês des Blancs yeast
I am fermenting at 73° F. Hopefully this will dry out the brew (I don't like it quite as dry as champagne yeast gets, but like it a little dryer than Cotês des Blancs would get if it ferments lower in its range.
After primary, I will rack to secondary and dry hop with 2 ounces of Cascade for a week, then keg and carbonate to about 2.5 volumes. Let it sit for a week for the carbonation to normalize out and.
Here's a pic of it in primary:
Because it's fermenting in the basement, I have it sitting in a water bath with the temperature regulated by a aquarium heater. I cover it with a used Ikea bag to keep the heat in a bit.

Big Ass Barleywine, slightly modified in the hops achedule (I don’t like Nugget hops), scaled up for a 5 barrel system, aged 5 weeks at 65 degrees, charged to 2.5 atmospheres in kegs, sat for another week to normalized then put into a growler. Had great efficency, final abv is 13.6% and very smooth.
