Oh, for a delicious, warm from the garden tomato and mayo sandwich.....
I love meatloaf and really don’t have a specific recipe. I usually use 1 1/2 lbs ground beef and 1/2 lb ground pork. The rest is typical... eggs, breadcrumbs, chopped onions, Worcestershire sauce, spicy ground mustard and whatever else I might think of at the time.
Most people I know have a “special” loaf pan but I just line a 9”x13” pan with Reynolds non-stick foil and *try* to shape it into a nice loaf. That way I can make 2 small ones. Eat one and freeze one. Perfect for us.
I like the almond chicken salad with cranberries.
Speaking of tomatoes and bread - here’s my fav crostini recipe, it uses 2 types of tomatoes, sun dried and fresh, so you get an intense tomato flavor.
Double Tomato Bruschetta
6 roma tomatoes, chopped
3 cloves minced garlic
1/4 cup EVOO
1/2 cup sun-dried tomatoes, in oil
2 T balsamic vinegar
1/4 cup fresh basil
2 cups shredded mozzarella
1/4 tsp s & 1/4 tsp p
1 baguette
Mix all but baguette and cheese. Let sit 10 min. Preheat broiler. Cut baguette into 3/4” slices. Toast 1-2 min, till slightly brown. Divide tomato mixture evenly over slices; top with cheese and broil 5 min till melted.
The only sandwich I eat mayonnaise on is a tomato sandwich....lots of mayonnaise, thick cut dark red tomatoes, lots of salt. Could live on that all summer!! I think I’ll go fertilize my tomato plants now. :)
I use my grandmother’s recipe for meatloaf, which starts with a meat mixture of beef, pork, and veal to which you add finely diced onion, tomato juice, rolled oats, egg, salt, pepper, and rubbed sage. Top it midway through baking with ketchup mixed with Coleman’s mustard powder and dark brown sugar.
Speaking of Spam... though it wasn’t requested...DH brought home this week a can of Spam. Why? I asked. He said he just saw it, and decided that one morning he’d like to have it for breakfast. JT are you starting a trend here? LOL Can’t think of Spam without thing of Mr. Blandings Builds His Dream House all the while looking for an ad slogan for Wham!
Fried Spam is ok, but not something to eat often.
