It wouldn’t offend anyone to tell a pollack joke.
It just wouldn’t make any sense to infer that they’re stupid. I think that went away just about the time that Lech Walesa kicked the commies out of Poland and Polish John Paul II helped kick the commies out of the rest of Europe.
But they are still good jokes:

Polish jokes and put downs were plenty when we were kids in the 70s.
Funny thing is, polish people are hard working and good with their hands so all the putdowns about something being “Polish” were not accurate.
