Everything went off without a hitch yesterday. Our lovely middle daughter made a bunch of vegetarian dishes to share and they were spectacular. I handled the turkey on the Weber grill and the stuffing. Mrs. POF handled all the regular side dishes and setting the table. It was a spectacular feast and now LOTS of leftovers. One of the nicest things is it was our first Thanksgiving in our remodeled kitchen and dining area. It is SO great to be finally done with our 1952 kitchen (which was actually so functional we copied most of the layout).
Only a couple of minor hitches yesterday: we forgot to get aluminum pans for the Weber to catch drippings, so we improvised with a crude aluminum foil pan; one wine glass was a casualty of the new porcelain tile floor; and I put the extra dressing wrapped in aluminum directly over the coals (instead of the area of the grill with no coals under it) and it got burned. That hurt the most as it’s my favorite part of the meal.
Our local air “authorities” allowed wood burning on Thanksgiving Day, I think for the first time since they started these stupid “Spare the Air” days. Even though it was 68 degrees out, we had a fire from noon onward.
To top it off, our oldest daughter (in Canada) got a call yesterday to come in for an interview for a new job she’s pursuing.
It was a wonderful day.
My favorite use for the last bits of turkey....HASH
Here's today's sandwich specialty for gametime:
On an onion roll, turkey, stuffing, gravy..a thick slice of vidalia onion on the bottom, and a big dollop of cranberry relish on top. Scrunch it all down so it holds..doesn't come squirting out the sides when you bite down on it..
YUM!!!

Add some beaten egg and flour and a touch of oil to some leftover turkey stuffing. Cook it in a Waffle iron till browned.
Use the waffles to make sandwiches with leftover turkey add some ham and white cheese to make a pseudo montecristo. Or a little cranberry sauce........?
