Fast Food need not be from the drive through. Here’s a recipe to try the next time you are pushed for time and need a healthy breakfast to go.
Flax Muffin - Fast Food From Home
1/4 cup ground flax seed
1 tsp baking powder
2 tsp cinnamon
1 tsp coconut oil
1 egg
1 packet stevia
Mix all ingredients together in a microwave safe mug. Micro wave for 50 seconds. Turn upside down on plate and wait for muffin to cool a little. Enjoy.
I saw this on TV’s Dr. Oz show. It doesn’t have that sugar crash that a lot of high carb muffins do.
Naturally I altered it to make it better. I reduced the cinnamon to just a pinch, added some raisins and nuts.
Sometimes I add some cranberries and almonds. Sometimes I add a bit of cocoa powder, so it’s more like dessert.
Other times, I make it an onion/garlic muffin to go with soup.
Anyway, it’s a great breakfast to take with you, and takes less time than the drive through.
Also, I find it helpful to spray the inside of the mug with a little olive oil.

I came up with a “cold fudge” today that was YUMMY!
2 Tbsp. peanut butter 200 cal
1 Tbsp. pea powder 15 cal (I used the Naturade Pea Protein, vanilla)
1 Tsp. coconut oil 30 cal
Dash of cinnamon
245 calories total
I placed ingredients in a small plastic storage container with a lid and stirred. Put the lid in place. Refrigerated it, and a few hours later, I opened it, and was able to slice it and eat.
Oh wow. As it melted, I used it for a spread.
Next time I plan to try adding some chocolate or carob powder in addition to the above.
